"Never compromise with taste"

To Øl are Tobias & Tore, two former high school students of Mikkel Borg Bjergsø (who went on to found Mikkeller) whose commitment to flavour saw the brewery voted 9th in the World on RateBeer in 2014. Their first beers were brewed alongside Mikkel in the school kitchen between 10pm and 6am on weekdays. We actually cannot think of a better teenage hobby and rue the countless hours wasted in guitar lessons and on muddy rugby pitches. All of their beers are unfiltered and unpasteurized and bottle conditioned. To Øl put 5-10% oats into every beer they make and claim that "is the secret behind the sexy haziness, body and mouthfeel, as well as good foam".

TASTING NOTES // 

This week we are drinking the second of two from To Øl- a hoppy Winter American style Pale Ale brewed with pine needles and orange peel. Don't be mistaken by the wintery name and amount of ingredients- Frostbite is a surprisingly bright, fresh and delicate beer. This Pale Ale does not whack you over the head with hops, rather it seduces you with an aroma of pine, citrus fruits and grass. It is softly carbonated with a slightly oily texture and medium bitterness. The base malts provide medium body and a slight caramel sweetness. The cocktail of hops takes the lead with tropical, citrus and resin flavours. The extra ingredients provide subtle top notes which make Frostbite something extraordinary.
