Felicity is a mixed ferment barrel aged wild ale with rhubarb. Made with 60% pils and 40% unmalted wheat this beer was inoculated overnight in our coolship. The following day we pumped the wort into a barrel and pitched a mixed culture of yeast and bacteria. Fermented and aged entirely in a french oak ex wine barrel for over 1 year. Finished with a small amount
of rhubarb.
