This dark saison spent 10 months in a freshly emptied ex. Canterbury
wine barrel on top of Canterbury raspberries and Otago sour cherries. Wilderness
also pitched a blend of brettanomyces which brings some background
complexity to the beer. This beer is all about showcasing south island
produce. No bacteria was pitched into this beer - all the acidity is
coming from the sour cherries, emphasized by a complete fermentation.
