Dark funky saison barrel aged with sour cherries and raspberries.
The second vintage of Cerise – Wilderness’ dark saison spent 18 months in an ex. Canterbury wine barrel on top of raspberries and sour cherries.
Wilderness also pitched a blend of brettanomyces which brings some background complexity to the beer. This beer is all about showcasing south island produce. No bacteria was pitched into this beer - all the acidity is coming from the sour cherries, emphasized by a complete fermentation.
