We took a stout, gave it a hint of vanilla and a good deal of toasted coconut and created one season defying, genre bending brew. Imperial stouts are usually thought of as a cold weather beer, but here the coconut and vanilla blend push the image of the stout into a year round, all season style.

‘Merica is a single malt, single hop farmhouse ale. It’s brewed with floor malted pilsner and 3lbs per bbl Nelson Sauvin hops. The beer is conditioned with 2 brett strains and wine yeast. The Nelson hops provide white wine flavors while Brettanomyces add a juicy quality to the beer.

Clearly, style lines have been crossed. Is it half-IPA, half-stout? Not quite. It’s definitely all IPA, but it’s also the best of both styles, making this love child of a beer simply just a beautiful, pleasure-seeking meld of imperial IPA and mocha indulgence. How did we come up with this inexplicably delicious creation? Well, that doesn’t really matter. What matters is that it exists and that it’s here for you now, thanks to our deliberate disregard for brewing norms. Some things are not meant to be known, just enjoyed...thoroughly.

Vertical Epic 02/02/02 was not brewed "to style". Instead, we tried to create something new. It’s triple-ish in nature, with wit character, coriander, orange peel and black pepper, and has way more hops (Centennial) than either a Belgian triple or a Wit would. Belgian yeast was used. Belgian Strong Ale is the closest category that fits.

I awake from a slumber that’s been anything but peaceful. I don’t take kindly to idling and I am anything but neutral. Life has nothing to do with killing time, and the knowledge that months have passed since the onset of my sequestering in this pitch-black oaken tomb (albeit a barrel flush with brilliant aromas of vanilla and char) does not sit well. But then comes a tingle followed by rejuvenating warmth, signs that something is different…something has changed…and for the better.

A San Diego classic, AleSmith IPA showcases the versatility of American hops. Aromas of grapefruit and tangerine lead into an abundance of fresh pine and tropical fruit notes followed by a crisp, resinous bitterness. The complex hop profile is supported by a firm malt presence to create an incredibly flavorful and well-balanced IPA.

Inspired by classic European lagers, our entire Brewing Team got together to create this truly collaborative beer that captures the essence of European tradition. The result, Spezial Pils, is our take on a German-style pilsner with a pleasant balance between light, grainy malt and spicy, floral hops. We lager it at freezing temperatures for an extended period to round out its delicate flavors and improve drinkability. The finish is crisp and clean with a pleasant dryness and subtle bitterness. Prost!

When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. Sourcing classic Cascade from the Pacific Northwest and Australian Galaxy hops from…yes…Australia, we made a beer both lovers of frothy peaks and hoppy green buds will be stoked about. At the same time, we stayed true to our San Diego roots by pushing the hop boundaries of this style. While some might think it lingers on an edge far closer to an IPA, with all the dry-hop flavor and aroma, it’s actually right in line with the current-day interpretation of a West Coast pale. Ours just so happens to have an Aussie accent that’s cascading with a juicy amount of grapefruit and passion fruit hoppiness.

We've taken our love for the Loral hop a step further by showcasing it in this unfiltered, moderate (by Stone Brewing standards) ABV beer. A simple malt bill lets Loral be the star here and we chose to go unfiltered to retain as much of the floral, citrus, and herbal qualities as possible. A truly unique and remarkable IPA! This beer pours golden with some haze and a white head. There's an intense floral nose with candy, mango mochi, lemon and pine. One sip will render hints of lemon sorbet, hard candy, spice, with herbal and noble-hop undertones. While crisp and clean, this IPA is very balanced with subtle bitterness.

Bold, spicy and menacingly delicious, this American-hopped India Pale Ale offers an aromatic punch and then follows through with a lasting, full-bodied finish. Pine and citrus filled nose from the American hops. Malt sweetness in there as well. Drinkable hop juiciness is the key while remaining balanced with ample caramel presence.

Crisp and aromatic, this boldly-hopped American ale balances notes of citrus and tea-like earthiness from American hops with a subtle German malt base. Citrus and catty hop character from the Citra and Simcoe blend. Aromatic but not over the top. Flavor is similar but has a dry toasty finish.
