Beer #295 - Molly Rose / Crowd Goes Mild
BREWERY // After travelling the world investigating beer, working in breweries all over Australia and even a spell in the wine industry, Nic Sandery knew it was time to make his own beers using all the knowledge he had collected. He wrote down the values he wanted this new brewery to stand for - honesty, hospitality, humbleness, hard work and ingenuity - and realised these were all traits instilled in him by his grandmothers Molly and Rose. Cuisine, science and different international beer cultures all influence Nic's brews. A trip to Japan informed his dark lager, travelling the US helped him perfect his IPAs and most of all he takes inspiration from the wide and varied beers of Belgium which have influenced his wild ferment, sour and farmhouse ales. We've visited Nic a couple of times since he opened his snug brewpub in 2018 and we can't wait for borders to open so we can get back over to Collingwood, Melbourne.
BEER // Since we last featured a Mild as Beer Of The Week, our members have being clamouring for more mild magic. Many brewers associate Mild with 1970s Yorkshire granddads (which apparently aren't 'cool') so we were delighted to hear Molly Rose were big fans of the style. Brewer Nic immersed himself in Mild culture while in England - visiting breweries, inspecting mysterious stone squares and imbibing countless pints of well kept real ale. The deliciously session-able Crowd Goes Mild is, at heart, an homage to the simple and delightful 'liquid bread' beloved by working class Englishmen in bygone days. It's built around a nutty, biscuitty malt body. Then it was given a modern, new World twist with liberal Simcoe, Citra & Mosaic dry hopping which add fresh melon and citrus notes.
